I despise dry mushy baked potato.  Try steaming potatoes lightly -- I also
only like the waxy varieties ie yukon, red, purple etc rather than the
Idaho (baked) variety. The waxy varieties should never be over cooked and
even when baked, do not get so mushy and dry etc like an Idaho.
