Actually Stefansson addressed this very issue.  Although "Eskimo" is
Algonquian for "eats meat raw", Inuit ate most meat cooked over a seal
oil fire.  Stefansson himself ate his meat rare but not raw and believed
from his experences that this was adequate to provide vitamins.

BTW, many Inuit consider the word "Eskimo" to be as demeaning as the
N-word is to African Americans
