The issue with ground beef is that the animal's faeces may
get ground up with the beef if the slaughter house isn't
clean or if their procedures are sloppy.

I would be very reluctant to eat purchased raw ground beef.

However if I had supervised the slaughter of the animal or
it had been done by people I trust I wouldn't have a problem.
