Speaking of bacon, I was reading Ann Louise Gittleman's book Your Body
Knows Best ISBN 0-671-87591-4; (She emphasizes paleotype eating); the
chapter The Detrimental Effects of Trans Fats:

'The process of oxidation is what makes certain fats dangerous elements in
the body. Oxidation can occur not only as a natural process of burning
energy, but also as part of the processing of foods before they are eaten.
Foods become oxidized when they have been left out at room temperature or
are smoked fired, cured, and aged, as sausage, bacon, and cheese
are...eating oxidized foods raises your bad LDL and lowers the good HDL.
..also causes the formation of free radicals which are unstable molecules
that alter cell membranes and cellular proteins. Free radicals are pointed
to as prime causes of cancer, aging and heart disease.'

..to eat bacon or not to eat bacon...?

Also, I found some umeboshi paste at the healthfood store (speaking of
aged). These are salted pickled plums-'naturally pickled the slow
traditional way'. I had first read about them in William Dufty's Sugar
Blues. Very good with meat! I just ate a cold leftover meat patty with it
and it really turned the patty into a taste sensation!
