Well, one of my mini-addictions is canned sardines.  They are canned
with
the bones in place and are rather high calcium.  As a bonus, many
people
object to the smell, so opening a tin can clear your office quickly.
:-)
Canned salmon and mackrel are also high in calcium.  The prices here
for
fresh salmon fluctuate so I switch to canned when the fresh prices get
stupid.

I also eat the "knuckles" off of chicken wings, generally leaving only
a
couple of small bone stubs when I am finished.  Actual bones tend to
be
high in calcium.

A question for the group.  When ever I make a demi-glace (concentrated
veal
stock),  The bones are boiled until they are just about paste.  I
should
think that the resulting stock would also be high calcium?
