There is no contradiction between those different statement.
The food in itself is not more or less digestable  in itself .
The digestability is dependant on the relationship between the food and the
consumer at any given time.
A body needing some specific nutrients wil get attracted  to  and get ready
to received  the apropriate food . In that situation the food wil be very
easely digested .

mixing many foods together will confuse this abilty of the body to recognise
the food and  to respond apropriatelly to  the digestive requirements of
that food ( ex secretion of hydrochoric acid and alcaline saliva at the same
time).
When not needed  at time , the food in its natural state will become hard
for the body to handle , the body will not get trigered to secrete the right
combinaison of digestive juices.

In that condition cooked food will bypass this natural  qualitative and
quantitative regulation , doing the work for the body  of breaking down the
food and lightening the burden of digestion .
In truth cook food will allow you to eat what you will not have eaten in a
raw state (because  of the taste barrier and also because of the
impossibility to salivate or digest this food. easely)
Raw animal fat is a good ex , when in need , the fat just melt in your mouth
and when not in need the fat become sticky,  glueing to the teeth hard to
swallow .
Just melt it artificailly with heat and you can swallow way more.

The issue is to ask :how beneficial or harmfull ,  is it to eat beyond the
limits of the  natural regulation of intake.( in quality and quantity).?
