Dear Richard,

<< You can make bone broth by roasting bones

and then adding water and cooking them (best with some lemon juice or

vinegar added to the water) for hours. The calcium leaches into the broth,

which tastes deliciuus and can be used for soups, pot roasts, etc.

I am curious to understand why the bones need to be roasted first. I have
been making broth from raw organic beef bones. I would appreciate any info on
this. Thanks.

Susan
