Well, Jim, I think firstly that anything in a can is without air, enzymes,
or other signs of life. I'm also not sure that there is any accessible
Omega 3 left after the cooking in the canning process. And I know I don't
want to eat the oil-packed ones, in rancid soy oil or something like.

So I eat canned water-packed sardines, but not for Omega 3 content, and not
refrigerated, although if I had a partial can left, I'd certainly keep it
cold.
