Strictly speaking, methinks olive oil, coconut oil, palm oil, fendered
beef/pork/lamb fat.

I use butter although most wouldn't consider it paleo. I use clarified
butter that I clarify myself from organic whole butter.

I really like palm oil and coconut oil for higher temperature work.

What types are considered paleo and what types do you use?

The reason I am asking is that my son wants me to make him some fried
plantains.
