Oddly enough, that's exactly my situation, except instead of sand I have  
clay.  I brought in four pickup loads of dirt and compost and built raised  
beds.  I didn't bother trying to level the spot (though it's not *that*  
bad), I just level the soil in the raised bed -- the plants are far less  
worried about it than I am, and with the greenhouse cover keeping the wind  
and rain off, erosion isn't a big issue.

Just add water and meat and you've got a stew.  :-)
