Just an aside to this discussion: I've found that domestic geese are rather
fatty and you do indeed have lots of goose fat to play with.  Now a wild
goose is another story.  They do develop a layer of fat as winter approaches,
but I still have to treat them as a lean meat during cooking, adding moisture
or fat to prevent the meat from toughening.
