I've eaten both cooked and raw meat. I prefer it
cooked rare to medium rare because of the taste
(perhaps because of my northern European ancestry?),
but on occasion I just get a hankering for raw.

Any digestive problems I've had seem to be caused by
whatever I might eat with the meat. If I eat meat
alone (raw or cooked), I'm fine. If I eat the wrong
type of veggie or just about any fruit with the meat,
*then* I get the "sits like a rock" reaction.

My dogs are pretty variable (sorry to bring up dogs
again). The Cocker is very anal and has to have his
food "just right" (which rarely gets done, so he sulks
:). The Springer, on the other hand, will eat just
about anything prepared just about any way it can be
prepared at any time of the day or night.
