don't think either that eating raw animal is paleo .
putting meats in vinegar or lemon is surelly not paleo
chicken eggs are the result of a selective breeding involving an unatural
diet for chickens disrupting their hormonal balance ( grains do that to
them - good for quantity of eggs,  bad for quality  )
it is way less dangerous to eat raw meats than to eat half cooked meats not
eaten right away .
parasites in fishes or other animals are most often safelly disposed by the
body before they can take hold on you . like not everybody get affected by a
flu viruses .
there is many peoples eating raw animals meats for years ( personally 14
years with only raw meats and all my life for some meats --(i have not been
raised in north america and so are not culturally scared of the living ).

there is still a constant :animals meats in their raw state are way more
easelly  digested than coagulated proteins .
