You're lucky, normal build. I was pushing 6' and 132.
Scrawny. Now am at least approaching normal at about 155 (70
kilos for you French Imperial subjects)

Only three weeks? Pretty good. You might notice bigger
changes as things recover.

What kind of training are you aiming for? I am finding that
at this age it is easy to overtrain. I try for every other
day at most, and have many 2 day rests. This allows for much
faster workouts on the days I do run. Quality over quantity.
I think this would probably have been better when I was
younger too, had a lot of injuries from overtraining.

 Generally on my running days I avoid much carb, except
incidental ones in the breakfast veggies, or in some
berries. Meat, eggs, and mixed fats an hour or two before
the run.

Today and last night I tried increasing carbs and decreasing
protein, mainly by eating more fruit. These days the sugar
in one banana is enough to make me feel overloaded and
heavy, but I am persevering in the name of "science" ;--)
Tomorrow I will have a high carb low protein breakfast, then
try a run. Oh, fat is still fairly high.
