Some restaurants use lactose (or indeed another sugar) at certain times of
the year on their fries to get them to brown - when the natural sugars in
the potatoes are lower.  This means that checking the ingredients on the box
once may not be accurate - next time they may have the lactose on them.

McDonalds in the UK, when I checked, said they used beet sugar, not lactose.
