Here is a low-fat pudding mix that claims to be "dairy-free".  It is Mori-Nu
Mates.  It is made by Morinaga Nutritional Foods, Inc., Torrance, CA.  It
contains no refined sugar and claims to be all natural.  Instructions call
for mixing with Mori-Nu Silken Lite Tofu and water.  It is delicious and my
children love it!

We also use another product that someone might be interested in.  It is:
Instead of Yogurt Dessert Mix.  It also claims to be dairy free, low sodium,
and fat free.  One package makes 2 4-oz. servings.  It is made by Sovex
Foods, PO Box 2178, Collegedale TN 37315.  It comes in a variety of flavors.
Mix with water, chill, and serve.  Tastes great!  I use this to eat "plain"
as you would regular yogurt. . .or mixed with Emes gel to make a cheesecake
type pie with fruit topping.
