With my son, the corn allergy doesn't show up right away.  It appears in
the next day or so.  So if you are allowing yourself corn syrup every
few days, that could be a problem.  My son is older than yours (by a
lot) :-) but he does much better if he avoids corn and wheat altogether.
We're rotating most everything else now with good success.
