Pammi,
     I generally use rice milk as a substitute for a cream sauce. I've found 
there is no "right" or "wrong" way to following an established recipe.   I 
just experiment by starting with the basic recipe, then try it with different 
ingredients different times to see what turns out the best! I keep notes on how 
it turns out, with suggestions for what I might try the next time.
