Jeny,

I don't think you can reliably use goat's milk or any other animals
milk.  It probably depends upon if you test positive to lactose or
casien.  My daughter (at 12 months) tested positive to both, so we're
staying away from both.  Yes, not giving her cheese is *very* hard.
I've tried some cheese substitutes (watch out - I've found that
most cheese substitutes contain casien) but she doesn't like them.
They don't melt well.  They test funny.  I've decided it's better
to avoid the concept of cheese completely.

As for an egg substitute, I'd picked up an item while in Australian
because a friend used it.  It's tapioca based.  Make sure you don't
have problems with this.  I've used it for banana muffins and a chocolate
chip cookie recipe (minus the chocolate chips) and the items turned
out well.  She's had no problems with this so I'm optimistic.  I've
since found a similiar product in the US.  I believe it's called
Ener G.  I found it in a health food store.  It's tapioca and potato
flour based.
