Cocoa butter is dairy free.  It comes from a part of the chocolate making
process after grinding down the cocoa beans into chocolate liquor & its
separated out.  Don't remember all of the details from our Hershey Chocolate
factory tour this summer, but it is dairy free.  We use the Ghiradelli
chocolate with no problem.  It is made on a line that uses dairy but is
washed in between runs, so should be okay for lactose issues.
