i'd love the recipes!  lisa, can you tell me (in very concrete & specific terms <g>) how you make the lasagna. just buy any "extra firm tofu", smooth it in the blender or food processor, & then just substitute amount equal to whatever's called for in the lasagna recipe??

I have started substituting the extra firm tofu for ricotta & cottage cheese
w/ great results I just run it through the blender first.  As you mentioned
great for lasagna or any other stuffed pasta or shell.

Can send you the recipe for stuffed shells if you like?
