If your son can eat soy, try soy-nut-butter.  If you are used to peanut
butter you probably won't like it, by my nearly-two-year-old loves it.
Spread thin on crackers to avoid a choking hazard.  Similarly sunflower
seed butter or tahini (sesame seed butter) if he can have those.

Avocados.  Another well-loved treat in our family, fairly high in fat.

Give him high-fat dips for his fruits and veggies.  (Salad dressing, etc).
Saute some of his veggies in olive oil.  Dress his pasta with a little
oil and garlic.

Oatmeal cookies -- some health benefits in addition to the needed fat.

Finally don't be afraid to let him have the french fries from time to
time.  They really are good for him ;-)  If you want, make fried sweet
potato slices/fries at home.  Yummy and very good for him!  This reminds
me that we haven't had sweet potatoes in ages...
