I can tell you what I do. Trust nothing. I have been constantly amazed by
finding some foods you would never suspect contained milk but do. Most
margarines, for example, fill that bill. Many medications use lastose as
filler (liquid versions often don't though e.g. Claritin).

I read labels. Unfortunately the cuplrits use names that have no apparent
connection to dairy. What is stearol-2-lactylate, natural flavors, etc anyway?

I substitute non-dairy ingredients in recipes with little or no problem for
most things. There are some really good soymilks and soy cheeses out there
these days. There are also some LI free prepared foods that have the casein
milk protein but no lactose. That's bad to dairy allergies but quite
acceptable for LI people. Vitamite milk substitute is an example of this.

For restaurant or take-out food, you have to ask them. Some burger joints
have 800 numbers or so I've read. I haven't personally used that type of
service. When I go to a restaurant I ask the serving staff and they are
always very helpful. They will go ask someone and if in doubt will
recommend some other dish.

Lastly, if it's just LI, you can take pills or liquid to mitigate the
symptoms. I happen to started out as LI only but progressed to a dairy
allergy. However, I don't react to casein so am better off than many others
who react to it.
