Fermenting dairy starts the process of breaking down the protein and sugar
but does not complete it.  I have gluten intolerance(possibly celiac.  I
haven't had my biopsy yet) and also an IgG allergy to casein.  Yogurt and
cheese give me stomach pain and headaches.
