Would maybe "Egg Beaters," the egg substitute do it?  I used them a lot in
casseroles, or what we call in Jewish Cooking "Kugel."  It is something
like a cross between a casserole and pudding.  It can be  savory or sweet.
If anybody is interested for a wonderful noodle "Kugel" without milk, on
the sweet side, let me know.  I have a very good recipe that I can share.
Of course it won't work for the people on the SCD since it has the noodles,
unless somebody has come up with a "noodle substitute" :-)
