I've had problems with sausages also.  Some have sodium caseinate in
them, others lactic acid.  My daughter ahd a mild reaction to the sausage
patties at McDonald's.  I also recently read the label for Swift Premium
Brown and Serve sausage which I think was the one with the lactic acid.
Check your labels and I'll bet you find something.

BTW - I've used Jimmy Dean sausage (comes in a 1LB bulk type package) in
spaghetti sauce with no problems.
