After my children's last major exposure --pizza at the grandparents--
the out-of-control behavior in my daughter (screaming fits, balkiness)
started the next morning and continued till late afternoon. My son was
at school so I didn't notice any change in him, until the next day when
I'd found out he'd cut off a lock of his hair "being silly" at school
(this is NOT normal behavior for him).

Based on past experience, my son seems to get lightheaded and giddy and
progress from there to weepiness within about 4-5 hours of exposure.
They both seem to get better after 24 hours or so, but the severity
depends on whether it was a one-time ingestion or whether it has been
building up in their system for a while (I was gone for a week last year
to my father's funeral and my husband fed them cheeseburgers, pizza and
ice cream for 3-4 days running -- it was a nightmare when I got back for
the first day plus.)

As far as leg weakness goes, Trish, I'm almost sure I've seen those
symptoms described by people on the celiac list. You might scan their
archives to pull up the appropriate posts.
