Tofu is a great substitute for a lot of dairy and meat recipes, but use it
moderately. I learned recently that it has a high level of estrogen. Like
meat that's been injected with hormones, too much tofu can cause girls to
hit puberty too early and cause testosterone issues in men. It was recently
discovered that 2 year-old boys have been diagnosed with prostate cancer and
it was found they were fed solely soy formula throughout infanthood. Because
it was their primary source of food it was far more than their system could
use or be able to handle. if a woman is going through menapause, however,
she could probably eat it on a daily basis and it would benefit her as a
natural form of estrogen therapy much better than what she would get at the
doctor's office. Since my whole family eats it as a cheese substitute I try
not to use it more than once or twice a week. Lately it's been closer to
every 2 weeks since my husband's testosterone level has been found to be
low(not a lot of energy, slow facial hair growth, etc.) I don't know that
the tofu caused it, but i don't want to add to his problems.
   I wonder if certain brands of rice milk would be a good substitute in
some cases. Sue
