Try silken tofu, if soy is not an issue.  I tried a chocolate cream pie a
while back with a graham crust, a whole block of silken tofu and a pound of
chocolate chips (for which I substituted about 12 tablespoons of cocoa
powder and oil) and it made the most amazing pie and it did not harden.
