Hey, y'all...

just had a craving for pudding... tried the Rice Dream/agar recipe with no
luck and tried tapioca pudding with soy milk powder...yuck! Nothing was
working till I tried coconut milk!  It worked great in the tapioca pudding,
just substituting canned coconut milk for the amount of cow milk called for
on the box of Minute Tapioca.  The result was just like Mom's, only with a
slight flavor of coconut (which is not a bad thing, as tapioca can be
somewhat bland.)

No wonder those castaways survived so many years on Gilligan's Island!  Who
needs cows, anyway?

(Coconut milk works great in pumpkin pie recipes, too.)
