Friends, This Thanksgiving, I had a culinary challenge I wanted to share
with you. My Dad is allergic to cinnamon, one son is allergic to nuts,
and the other son is allergic to milk. PUMPKIN PIE? Well, we followed
the recipe on the can, substituting soy milk for the evaporated milk,
eliminating ground nuts altogether, and changing the spices from
cinnamon to an "on the spot" invented blend of allspice, nutmeg, cloves,
cardamom, mace, ginger and orange rind. DING! It was done. We let it
cool. Doubtfully, we tasted it, and WOW...the soy milk made a great
texture, and the spices....ooooohhh! Best pumpkin I ever made.
Sometimes, under challenge and duress comes culinary delight! BTW, at
my local store I found graham cracker crumb ready-made pie crusts that
were kosher PARVE. The brand of pumpkin I found that is very good is
One Pie...pure, nothing added.

Question for the list--has anyone ever heard of a cinnamon allergy? The
Food Allergy Network had no advice for me, and my Dad's doctor that made
the diagnosis has no help beyond that. My Dad is in his 70s, has enjoyed
cinnamon all his life until recently, when he went to the doc with sores
in his mouth. Doc did a test and came up with the diagnosis, but no one
we know of has ever heard of this allergy. Any advice? Thanks,
listmates!

Hope you all had thankful and delightful Thanksgivings!
