Imagine Foods (the Rice Dream people) makes dairy free puddings under the
name Imagine Natural Pudding Snacks. For those of you who prefer to make
your own, following is our pudding recipe...enjoy!


IMAGINE FOODS' PUDDING RECIPE:
This recipe works for chocolate, vanilla, or mocha pudding

13/4 cups RICE DREAM Beverage Vanilla or Chocolate depending on desired
flavor (Chocolate or Vanilla works for Mocha style pudding)

2 Tbs.  Maple Syrup

1 tsp. vanilla extract

1 Tbs.  agar flakes

1/8 tsp. sea salt

1 Tbs. arrow root powder, dissolved in 4 Tbs.  RICE DREAM

For Mocha variation, add  3 Tbs. grain coffee

garnish,   roasted slivered almonds  (optional)

In a saucepan, over low heat, mix RICE DREAM, maple syrup, vanilla, and
salt  (add grain coffee for mocha pudding).  Whisk in agar flakes and bring
to a simmer over medium heat for 3-5 minutes, stirring regularly.  Whisk in
dissolved arrowroot and cook for 1 minute longer stirring constantly.  Pour
into pudding cups or champagne glasses and refrigerate until well set,
about 1-11/2 hours.  Garnish with slivered almonds.  Yield : 4, 1/2 cup
servings.

Please be advised natural ingredients vary from one batch to another
causing slight differences.  Agar is a rather difficult and unpredictable
ingredient to work with. If your pudding does not set, a tablespoon more
agar is needed.  If it sets too thick and gelatin-like, try blending it
after it is set.  This usually creates the desired texture.
