Here's another veggie recipe:

2 cups grated zucchini
3 eggs
1 cup oil (also worked with new fruit based oil substitute)
2 cups sugar
2 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
2 tsp. vanilla
1 cup chopped nuts

Mix oil (or substitute) and sugar together.  Add eggs one at a time.
Add vanilla.  Add sifted dry ingredients alternately with zucchini.  Add
nuts.  Batter will be thin.  Pour into a greased 9x13 pan or Bundt pan.
Bake at 350 degrees for 55 minutes.
