Check out http://www.aces.uiuc.edu/~fshn/links.html in particular the
http://www.ift.org the inst. of food technologists- that may help you on
your quest. I work at the Univ. of Ill an can search for some prof. around
here may know also- (I married a Chem E, so I'm partial to them:) ). FYI-
you said you're advoiding sugars and starches- all plants that I know of
have those, too. Maybe you already know of ift.... How about the kosher
people- they know alot about production- and have to have separate machines
(and prayers) to ensure purity.
