Unfortunately, true allergies often work like this.  You can be asymptomatic
for awhile, or have mild reaction.  Later on, and without a specific interval,
you can have the kind of dramatic allergic reaction that you described.

I know.  I have had it happen twice to me, with different allergens.  First,
to cats (after having owned and lived with a cat for almost 5 years without
symptoms).  Then to bee stings.  (Fortunately, never to dairy, although I'm
severely LI.)

I would say, your best bet is to follow aggressively with the allergist.
