This doesn't necessarily apply just to Vegans but to Milk allergies as well, but some soy cheeses
still have casein in them, which is disconcerting, but there are truly vegan cheeses...  I'm not
sure about soymage...

A lot of good bruschettas can be made without cheese, just lots of crunchy french bread and
toppings.
