I don't know why you crave bread and crackers specifically, but they are
carbohydrates, which are converted by the body to sugars. A drop in blood
sugar can cause the shakes. Have you been tested for hypoglycemia and/or
diabetes? I'd start there before assuming it's a milk/wheat thing (although
it could be that too).
