Jeffrey,

I don't have an answer to your question, but I'm suggesting another
question for you to be asking yourself.  Maybe you are allergic/intolerant
to more than just dairy and that is why you react at differing times.  I
just eliminated wheat in addition to dairy and have experienced great
improvement in intestinal symptoms.
