You got me confused here.
There is no such thing as "dairy free milk", as milk is dairy by definition.

There are several dairy-free beverages that strive to achieve (usually
unsuccessfully) the colour, consistency and taste of milk and therefore are
often labelled as "<something>-milk".  The most popular ones are based on
soy, rice or almonds.  The "enriched" varieties have added calcium (to the
level present in milk), vitamins and other minerals.  You can get them
unflavoured (which can be good, depending on the nature of the "sensory
issues") or with added flavour (usually vanilla or cocoa, sometimes
strawberry, etc.).

I am not a doctor but the statement "he needs all of the fat he can get,
from every source" sounds strange to me.  Is that what your paediatrician
said?  Is Riley showing signs of malnutrition? (No, just being "skinny" does
not count).  Unless there is some other problem or symptoms, just being at
60th% Ht / 25th% Wt is hardly a cause for alarm.

The following observation is directed to the list's audience:
Research has demonstrated that unsupervised consumption of growth charts is
a major cause of anxiety among parents.  I recommend the first chapter of

Regarding fat sources, if Riley is old enough for solids you can try
avocado.  It has a high fat content (unsaturated!), contains vitamin E and
can be mashed/pureed to any consistency.
