hello all. over on the gluten free list, we've been talking about rice wrappers for thai spring rolls. they are absolutely delicious. no milk, no egg, no gluten, no dairy of any kind. just vegetables and tofu or chicken and some seasonings and a delicious dip for the rolls, which can be eaten either fried or not.

in the event any of you are interested, the 'recipe' is as follows:

shredded raw carrot
cooked rice threads
bean sprouts
cilantro
chopped green onions
bite size chicken or tofu pieces cooked with garlic and ginger in sesame oil

moisten rice wrappers in warm water, place on a plate, place about 1 ½ tbs. of the above in a line in the middle of the wrapper. fold in the sides. roll up firmly but not too tightly (leave a little loose if frying). 

sauce: gf soy sauce, some lime juice, garlic powder, rice vinegar, tiny bit of fish sauce (optional)

can't give you exact amounts of anything, as i don't measure it. just do to taste.
