stomach of an unweaned calf used in curdling milk for cheese, junket, etc.

However you can get vegetarian rennin as used in vegetarian cheeseand I
believe this is dairy free (I'm not 100% sure) so maybe someone else can
give you more information. Rennin is the enzyme that is secreted into the
stomach by young animals.
