This to add to the Lunch Ideas thread.  Someone mentioned slipping in
veggies in quick bread.  My 2 1/2 yo loves to bake this with me.

This is a modified version of the recipe I also use for banana bread
(omit pie space and sub 2 ripe bananas mashed).  It makes great muffins
too!  It will make 48 mini ones (bake 12 min) or 12 regular sized (bake
22 min).  It works well with the EnerG Egg Replacer too.

Pumpkin Bread

1 1/3 c flour
3/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 tsp pumpkin pie spice
1 cup pumkin puree
1/3 c margerine (5 1/3 tbsp)
2/3 c sugar
2 eggs, beaten
        (or 1tbsp EnerG Foods Egg Replacer plus 4 tbsp water)

Preheat oven to 350F.  Grease a 6 cup loaf pan.  Cream margerine and
sugar.  Add dry ingredients and blend well until the consistancy of brown
sugar.  Gradually beat in egg mixture.  Fold in pumpkin until well
combined.  Pour into loaf pan and bake for 50 - 60 minutes or until
toothpick comes out clean.
