We found this to be true at CiCi's too - my son went there
for a birthday party, and I called ahead to ask about their
crust, sauce, etc.  The manager told me to ask for him and
he'd make sure we got what we needed.  Two years later, we
still eat there - and they still charge him a child's
buffet price for a large cheesefree pizza.
