I recently tried the Jello brand cook and serve Banana Cream pudding using
Vanilla Enriched Rice Dream, as I am allergic to all dairy and SOY.  I
allowed it to boil a little longer than the instructions say to, but I put
it in a pie shell and it set.  Sure was good!
