Deborah, I have used vinegar or preferably lemon juice added to soymilk as a
buttermilk substitute with great success. I caution you about the 6 week
muffins if you have any hint of candida albacans yeast fungus overgrowth,
which is a big cause of food allergies including milk allergies. Six weeks
moisture on wheat I would think would grow lots of yeast. If you have no
trouble with yeast, the soymilk/lemon juice should work fine. Carrie
