Here's a recipe for yellow cake that I adapted successfully from an old
"Better Homes and Gardens" cookbook:
two-thirds c. dairy-free margarine
one and three-fourths cup sugar
two eggs
one and one-half teaspoons vanilla
three cups sifted cake flour
two and one-half teaspoons baking powder
one teaspoon salt
one and one-fourth cup apple juice
Cream margarine. Add sugar gradually, creaming until light. Add eggs (I
used egg replacer) and vanilla and beat till fluffy. Sift dry ingredients
together; add to creamed mixture alternately with milk, beating after each
addition. Beat one minute. Bake in greased and lightly floured cake pan(s)
at 350 degrees for 30 to 35 minutes (I had to bake for 40 minutes).
