I too am allergic to soy and corn so margarine is a real problem, it is
terribly unhelathy but good sometimes so I am glad to stock up each year
at Passover time on kosher for Passover margarine available at kosher
markets or bigger supermarkets, it is made with cottonseed oil and tons
of other chemically based stuff but I can use it and having given up so
much else it does make me feel better to have a bit on a waffle
sometimes.  I also just use olive oil on potatos and that helps to
satisfy the need for a fat.
