Simple Text is only a very basic text word processor.  You can type text and pictures into this application, which used to come standard on all Macs. Depending on what operating system you are using, the accessibility features either came installed or needed to be installed from the system disk.  Called Easy Access, they included Sticky Keys, Mouse Keys and a screen enlarger called Close View.  In order to use Sticky Keys, tap the shift key 5 times.  If it is installed, you will see a small icon in the upper right corner of the screen and you will hear an ascending tone to indicate it is on.  Mouse Keys allowed the keypad to be used as a single finger mouse.   There are newer accessibility features included in OSX.  You may have to search Apple's web site for a listing.  Voice recognition and switch access have been developed.
