My original post asked if anyone on the list had ever been to Chile- specifically Santiago, Vina del Mar, and Valparaiso- while being gluten-free. I received these two responses. Thank you.

"Eat beans, rice, potatoes, and corn. Carry an information card in Spanish."

"I was told to bring my GF cereal, pasta, and snacks with me in unopened original containers. I also had a letter stating the foods were medically necessary from my doctor. The letter should help if you have problems in Customs. The trip went well for me and I had no major problems aside from the language barrier. If possible, I would recommend having something like the restaurant cards translated before you go to Chile."
