Hi Everyone,
 
My mom is feeling somewhat better after her gluten exposure, but not back to normal yet. We both want to thank you all for your wonderful responses and support! Overall we had 23 responses. 
 
A few people suggested eating a GF version of the BRAT diet (bananas, rice, apple sauce and GF toast or tea; note that the rice should be white rice after a celiac reaction because it’s easier to digest than brown rice, which contains bran). Several people also mentioned yogurt for the good bacteria, but a non-dairy version would be better to eat at first. See more details about this included in the lists below. Poached or hard boiled eggs as well as chicken broth were also popular. In general, advice included to eat a bland diet and to eat very simple, natural foods, one or two at a time to see how you handle it. I’ve categorized the responses into the following four lists.
 
Recommended Foods to Eat After Gluten Contamination:
n      Banana
n      White rice (cook a little more than package says, so that it’s even better tolerated by the intestine)
n      A blend of rice and quinoa
n      Hot rice cereal
n      Applesauce (unsweetened for diabetics, depending on sugar levels)
n      Cooked apples.
n      Tapioca Bread (GF, toasted), can include poached egg on top
n      GF crackers (e.g., Glutano)
n      GF Waffles (Van’s brand)
n      GF chicken broth (in the organic section of your grocery store), can add cooked white rice (and just maybe a few small pieces of chicken)
n      Eggs (poached or hard boiled)
n      Plain yogurt (goat/sheep/buffalo/soy/maybe dairy, but see below under things to avoid; can flavor with fruit, said one person; some organic varieties such as Mountain High have a low glycemic level which is good for diabetics; both Mountain High and Brown Cow have at least four cultures to help rebuild good bacteria in the gut, which often gets out of balance after a celiac reaction)
n      Jello with banana slices on top, plus Kraft Lite Cool Whip
n      Fruit salads (e.g., melons)
n      Baked potato
n      Bread pudding made out of pumpkin seed flour
n      Pedia’lyte Pops (sometimes found in the baby department; freeze them, cut the cellophane away, and eat like a popsicle)
n      For diabetics, Glucerna Nutritional Drink; For non-diabetics, Ensure or Equate (sold by Walmart and less expensive)
n      Raw honey
n      Hard, granular cheese like parmesan, which doesn’t contain lactose
A few days after being glutenized:
n      Lean meat and fish protein (some people feel okay eating these meats sooner)
n      Homemade chicken soup, of course with GF chicken broth
n      Steamed vegetables and leafy greens (collard and spinach), someone else said to avoid salads, though
n      Fresh fruits and fruit juices, such as papaya (some people suggest eating/drinking fruits earlier)
n      Egg salad with GF mayonnaise (Trader Joe’s brand)
n      Tomatoes, if can tolerate (home-made soups, sauces, raw)
n      Eggs (scrambled, fried, fixed any way)
 
Recommended Beverages to Drink After a Gluten Reaction:
n      Tea (e.g., chamomile)
n      Gatorade (for potassium and electrolytes)
n      Smart Water (available at Trader Joe’s; also for potassium and electrolytes)
n      Aloe Vera juice (to help the gut heal)
n      Tonic Water
 
Recommended Supplements to Take After Gluten Exposure:
n      GF Probiotics
n      GF Digestive Enzymes (such as the GNC brand)
n      Equate Calcium Caplets (check with mfg Leiner Health Product, to ensure each new bottle is GF)
n      Spring Valley Enteric Coated Fish Oil Caplets, 1000 mg (Omega 3)
 
Things to Avoid After a Gluten Attack:
n      No greasy, fried, oily, fatty, or acidic foods
n      Avoid dairy for a while (since the enzyme lactase, which is necessary to digest lactose, is produced by the tip of the villi and these can be damaged after the gluten reaction)
n      Processed foods
